**FEATURED RECIPES**
HOMEMADE POWER BARS
1 cup whole wheat flour
1/2 cup rolled oats
1 tablespoon ground cinnamon
1 teaspoon baking powder
1/4 cup Sucanat (a natural sugar)
2 egg whites or 1 egg equivalent EnerG
1/2 cup soy or rice milk
1/4 cup apple juice concentrate
1/4 cup raisins
about 1-1/4 cup chopped apple
Soak the raisins in the apple juice concentrate for 30 minutes. Spray 8″ square pan with vegetable spray (or use a non stick pan). Stir together dry ingredients. Add apples and toss to coat. Stir together all wet ingredients. Pour wet stuff into the dry, fold together just enough to evenly moisten the dry ingredients. Spread this thick batter into the prepared 8″ pan, bake at 350 degrees F for 20 minutes.

**MOTIVATIONAL MOMENT**
WINNING THE RACE
A few years ago, at the Seattle Special Olympics, nine contestants, all physically or mentally disabled, assembled at the starting line for the l00-yard dash. At the gun, they all started out, not exactly in a dash but with a relish to run the race to the finish and win. All, that is, except one little boy who stumbled on the asphalt, tumbled over a couple of times and began to cry. The other eight heard the boy cry. They slowed down and looked back. Then they all turned around and went back. Every one of them. One girl with Downs Syndrome bent down and kissed him and said, “This will make it better.” Then all nine linked arms and walked together to the finish line. Everyone in the stadium stood, and the cheering went on for several minutes. People who were there are still telling the story. Why? Because deep down we know this one thing… What matters in this life is helping others win, even if it means slowing down and changing our course.

**FUNNY OF THE DAY**
A police officer stopped a lady for speeding and asked her very nicely if he could see her license. She replied in a huff, “I wish you guys could get your act together. Just yesterday you guys took my license away, and today you expect me to show it to you?”
