Sage

Sage, the garden variety, not the desert variety, is grown extensively in its native Mediterranean region. A member of the mint family, sage's name comes from the Latin salvare, which means “"to heal."”

Extracts of sage have antioxidant properties; they act as a preservative, which probably explains sage's wide use as a meat seasoning for centuries.

Sage is highly astringent and aromatic. Its aromatic properties help sage create an environment in the body that is unfriendly to foreign invaders.
