We have been enjoying unseasonally warm days in our area of Virginia. We
have been busy getting our taxes and reports in order. It sure seems
strange that a whole year has gone by and we are back to doing our taxes
again.

Be sure to get yours done early to avoid that last minute crunch. I find
that if I don’t wait to the last minute my nerves sure do appreciate it.

Donna and I are both in good health and enjoying our lives to the fullest.

MAGNESIUM

Magnesium has been linked as beneficial to many illnesses. Our diet is
certainly not providing what it used to when the soils had the minerals in
them that were needed to put minerals in our food. That’s why
supplementation is so critical. Here’s some ideas on the benefits of
Magnesium.

PMS
A diet high in magnesium is recommended for women with PMS
as studies indicate that chronic intracellular magnesium depletion
can cause PMS symptoms.

HIGH BLOOD PRESSURE
In a hypertension trial, at the National Cardiovascular Center in Osaka,
Japan, supplements of 480 milligrams of magnesium were given to 60 men
and women who had high blood pressure for 8 weeks. The study found that
although the women,s blood pressure remained unchanged, all 34 men
experienced a small but significant reduction in the blood pressure
during the supplementation. They averaged a drop of 2 to 4 millimeters
of mercury (mmHg) in their systolic blood pressure and 1.5 to 2 mmHg
reduction in diastolic pressure.

Small as the observed reductions are, they may still be significant,
according to the National High Blood Pressure Education Program. It has
been reported, “For the general population, a reduction of 3 mmHg in
systolic blood pressure would yield 11 percent fewer strokes, 7 percent
fewer coronary events, and 5 percent fewer [premature] deaths.”

DIABETES
Magnesium is a key component forcarbohydrate metabolism. It can influence
the activity of insulin. Elevated glucose levels increase the loss of
magnesium in urine.

HEART DISEASE
Surveys have associated higher blood levels of magnesium with
lower risk of coronary heart disease. In addition, dietary surveys have
suggested that a higher magnesium intake is associated with a lower risk
of stroke.

Men know how painful childbirth is once they pass a kidney stone. That’s a
big incentive to avoid them. Until now, doctors have recommended a
low-calcium diet, because the stones contain calcium crystals and people who
get them have high calcium levels. But in a study in last week’s New
England Journal of Medicine, this diet was put to a test in stone-prone men..
It was compared over five years with a diet low in salt and animal protein
which also contributes to stone formation. Men on the second diet (low salt
and low protein) did much better, developing about half as many stones.

NUTRITION CHOICE

RISOTTO W/BUTTERNUT SQUASH & SAGE
From One Dish Vegetarian – 4 servings

1 med butternut squash, peeled, seeded, and cut into 1/2-inch cubes
1 Tbsp olive oil
18 sage leaves (12 whole, 6 shredded)
1/2 tsp salt
black pepper
7 cups veg broth or water
3 Tbsp butter
1 Tbsp olive oil
1 med onion, finely chopped
2 cups arborio rice
1 cup dry white wine
1/2 cup grated Parmesan (optional)

Preheat oven to 350 F. Toss squash w/1 Tbsp olive oil. Put in baking pan
with 12 sage leaves, season w/salt & pepper. Roast 15-20 minutes, turning
occasionally, until tender.

In a saucepan, bring broth to a simmer. Keep at bare simmer.

In heavy casserole, heat 2 Tbsp butter and oil over medium heat. Add
onion & shredded sage and cook, stirring, 2 minutes, until onion
softens. Add rice & cook, stirring, for 2 min, until well coated.
When grains are slightly translucent, add wine and cook, stirring, until
liquid is absorbed.

Add 1 cup hot broth or water, stirring frequently, until liquid is
almost absorbed; continue adding a little over cup of liquid at a time,
stirring until each is almost completely absorbed. Adjust heat so
risotto is always at a gentle simmer. After 15 min, stir in squash &
continue adding broth and stirring for another 3 to 5 minutes, until al
dente and creamy.

Stir in final 1/4 cup broth & turn off heat. Add 1 Tbsp butter &
Parmesan & combine.
