A NOTE FROM RANDAL

Hi Everyone,

We were so excited yesterday to visit the building site. With the
foundation and basement walls finished the flooring was down for the main
floor. We stood at each "window" and pictured our views for each room.
Especially for the windows that will be in back of each of our desks. If we
continue to have some good weather, it could be under roof sooner than we
think.

I have been looking for a focaccia recipe for a long time. However, I
learned today that I was spelling it wrong. Goes to show you, one letter
does make a difference. I am particulary excited to know how to make the
crust chewier. I had actually submitted that question to various cooking
sites. However, I never got any answers back at all.

Can’t wait for spring weather to arrive. Thanks for your readership.

STROKE RISK STRONGEST AT DAWN

Elderly people with high blood pressure who have morning spikes in blood
pressure have a greater risk of stroke. That’s the finding of a Japanese
study in the March 3 online issue of circulation.

The morning blood pressure surge is also linked to brain lesions known as
silent strokes.

This is the first study to show that a morning spike in blood pressure is a
predictor of stroke in elderly people with high blood pressure.

The study included 519 people, average age 72, with high blood pressure.
They were monitored by the researchers for an average of 41 months.

Q. Should I take HCl (Hydrochloric Acid) Supplementation.

A. Personally, I have taken HCl supplementation in the form of a product
called PDA (Protein Digestive Aid) for over 10 years. I only take it with
my calcium at bedtime. Many years ago I was taught that HCl acid production
in individuals begins to diminish after the age of 35.

If you have acid reflux then you should avoid PDA because of the HCl in its
ingredients. Normally acid reflux comes from too much HCl in the system.

In order to assimilate calcium properly HCl needs to be present in your
stomach. Taking the PDA, I have noticed that I assimilate the calcium more
effectively and easily.

If you take calcium for bones or nail growth and don’t see any results, you
may have the wrong form of calcium, or you may not have enough acid pH for
it to be assimilated.

FOCACCIA BREAD
From Vegetarian Cooking for Everyone
Serves 6

* 2 teaspoons active dry yeast
* 1/2 teaspoon sugar
* 1 teaspoon salt
* 2 tablespoons fruity olive oil, plus extra for the top
* 2 1/2 to 3 cups all-purpose flour OR a mixture of whole wheat and white
* Cornmeal if using a stone
* 1 1/2 teaspoons coarse sea salt

Dissolve the yeast and sugar in 1/4 cup warm water in a small bowl and set
aside until bubbly, about 10 minutes. Meanwhile oil a bowl for the dough.

In a mixing bowl, combine 1 cup warm water, then add the salt, oil, and as
much flour as the dough will hold. Turn it out onto a floured surface and
knead until smooth, working in enough flour to make it easy to handle, about
5 minutes. Place in the oiled bowl, turn once, and cover with a damp cloth.
Set in a warm place to rise until doubled in bulk, about 45 minutes to an
hour.

Turn out the dough and roll it into circle or oval about 1/2 inch thick.
Leave it whole or slash it decoratively in several places, then pull on the
dough to open the cuts. Place on the back of a sheet pan or a wooden peel
dusted with cornmeal, brush with olive oil, and sprinkle with coarse salt..
Cover and let rise again, about 30 minutes.

Meanwhile, preheat the oven to 400 F with a baking stone if you have one.
Bake the bread in the middle of the oven until the bread is browned, about
30 minutes. To develop a crisp crust, spray the bread with water two or
three times during the first 10 minutes in the oven.
