HIGHER MAGNESIUM INTAKE LOWERS DIABETES RISK, STUDY SAYS
Researchers from Harvard Medical School have found an inverse relationship between magnesium consumption and incidence of type 2 diabetes.
In one of two related studies published in the January issue of Diabetes Care, researchers found that among the 39,345 participants in the Women’s Health Study, overweight women who consumed large amounts of magnesium were 22 percent less likely to develop type 2 diabetes than those who consumed lower amounts of dietary magnesium.
“The take-home message for the public is that a diet rich in plant-based foods such as nuts, whole grains and vegetables that are high in magnesium may be beneficial for [diabetes] prevention,” Dr. Simin Liu, who participated in both studies, told Reuters Health.

STUDY: HIGH-GLYCEMIC FOODS, PREGNANCY DON’T MIX
Mothers-to-be who consume large amounts of sucrose and high-glycemic foods could be at greater risk of giving birth to babies with neural tube defects (NTDs). Researchers at the University of California, Berkeley also found that obesity prior to pregnancy increases the risk of NTDs.
The study, reported in the American Journal of Clinical Nutrition, derived from a population-based case-control study in which the researchers interviewed the mothers of 454 NTD cases and 462 controls.
For women who consumed large amounts of sucrose and high-glycemic foods, the risk of NTDs doubled, regardless of whether the women took folic acid supplements. For obese women, the risk increased fourfold.

COMMON BACTERIA LINKED TO ALZHEIMER’S DISEASE
There’s a link between the common respiratory bacteria Chlamydia pneumoniae and amyloid plaques found in the brains of people with non-hereditary Alzheimer’s disease (news – web sites).
That’s the news from a study by researchers at the Philadelphia College of Osteopathic Medicine’s Center for the Study of Chronic Diseases of Aging.

For the crust
* 1 1/2 cups pastry flour
* 1/2 teaspoon baking powder
* 1/2 teaspoon cinnamon
* 6 tablespoons canola oil
* 6 tablespoons maple syrup
* 1/2 teaspoon plus pinch salt
For the filling
* 2 pound firm tofu
* 1/3 cup canola oil
* 1 1/2 cups maple syrup
* 1/2 teaspoon salt
* 1/2 teaspoon minced lemon zest
* 1/4 cup fresh lemon juice, strained
* 2 tablespoons vanilla
* 3 tablespoons agar flakes
* 2 tablespoons arrowroot powder
