We have for the first time since moving here had our Clematis bloom. Before
the deer had been eating the Clematis and everything else we put down. We

VITAMIN C, E MAY AID HEART TRANSPLANT PATIENTS
NEW YORK (Reuters Health) – The antioxidant vitamins C and E might help slow
artery disease in patients who have recently had a heart transplant, results
of a small study suggest.

Coronary arteriosclerosis, the hardening and narrowing of heart arteries,
commonly develops in the few years after a heart transplant. As methods of
preventing organ rejection have improved, the longer-range complication of
arteriosclerosis in these patients has taken on more importance, according
to the authors of the new study.

In their study of 40 heart transplant patients, daily treatment with
vitamins C and E helped to minimize the growth of artery-clogging plaque
over one year. Researchers led by Dr. James C. Fang of Brigham and Women’s
Hospital in Boston, Massachusetts, report the findings in the March 30th
issue of The Lancet.

The study patients were also on cholesterol-lowering statin medication, but
the vitamins inhibited plaque growth “over and above” the effects of statin
therapy, Fang’s team reports. Patients who took cholesterol drugs and the
vitamins showed only slight thickening in their artery walls, while those on
cholesterol medication alone had more substantial thickening.

Antioxidants like vitamins C and E help neutralize the effects of damaging
forms of oxygen known as reactive oxygen species, and some research has
suggested antioxidants are protective against heart disease and cancer.
According to Fang and his colleagues, their results support the idea that
oxidative stress contributes to arteriosclerosis after heart
transplantation. Moreover, the results suggest “a potentially useful
therapy,” the researchers write.

Larger trials are needed to confirm these results and to see whether the
benefits of vitamins C and E in transplant patients persist over several
years, they add.

FARMED FISH: THE CONSEQUENCES

Farmed fish are like the consumptive children of an aristocratic Victorian
family: coddled, spoiled, inbred, genetically weak, servants catering to
their every whim. Living in crowded net cages, farmed fishies are more prone
to pests and diseases; to counteract the problem, they are indeed fed
antibiotic-laced food. Dyes can be added to the food as well, to give the
fishies’ flesh a pinkish, wild-salmon-y hue. And they are fed as much as
they will eat, which is a lot; it takes two or three pounds of wild caught
fish to raise one pound of farmed salmon. The math does not bode well for
wild fish runs.

What goes in must come out: A salmon farm with 200,000 fish produces the
same amount of poop as a town of 62,000 people. Thanks to the sewage system,
aka the tide, most of the antibiotic-laden excrement wafts slowly to the sea
floor, where it suffocates all living beings.

Then there’s the problem of fish escaping from farms. Despite their delicate
Victorian constitutions, escapee salmon may thrive in the wild, raising
fears that they will disrupt the natural gene pool and alter centuries-old
wild fish customs. To top it all off, wild fish have little resistance to
the diseases and pests that are prevalent in fish farms, so AWOL fishies can
transmit dangerous illnesses. Concerned fish observers are seeing
unprecedented levels of disease in salmon runs near fish farms.

The bottom line? For your own health, and for the health of ecosystems
worldwide, it is best to eat sustainably harvested wild fish. Actually, for
your own health it’s probably best not to eat fish at all, since antibiotic-rich fish poop isn’t the only thing contaminating our waters. But if you must eat fish, Environmental Defense can help you make an educated decision about which fish to choose:

NUTRITION CHOICE
LINDA’S LASAGNE
Serves 6
* 12-15 strips lasagne
* 4 tablespoons olive oil
* 1 large onion, chopped
* 2 cloves garlic, crushed
* 1 (2 1/4 ounce) can TVP mince
* 3 (16 oz) cans chopped tomatoes
* 1 teaspoon oregano
* Salt and pepper to taste
* Stock or vegetable water
* 1 cup cottage cheese
* 1 cup cheddar cheese, grated
Preheat oven 350.
Place lasagne strips in saucepan, cover with water, and boil for a few
minutes until they are starting to soften.

Heat the oil in a large saucepan and saute the onion and garlic. Add the TVP
mince, chopped tomatoes with their juice, oregano, salt and pepper. Simmer
20-30 minutes, adding a little stock or water if necessary to make a moist
sauce. Remove from heat.

Pour a layer of tomato sauce in a deep, large baking dish. Spoon a layer of
cottage cheese over the sauce, then arrange a layer of lasagne over that,
followed by a layer of grated cheddar. Repeat this layering process until
you are about 1 1/2 inches away from the top of the baking dish. Finish with
a layer of tomato sauce topped by a final layer of cheddar cheese.
Bake the lasagne 30 mins, until the cheese is brown and bubbly.

Protein; 13g Carbohydrate; 3mg Cholesterol; 172mg Sodium
