A NOTE FROM RANDAL
Hello Everyone,
Hope you had a good Earth Day. Donna and I went to a park up in the northern part of Virginia. This park was saved by the valiant efforts of one woman against a very large proposed construction subdivision project. Just goes to show you what one person can do if they put their mind to it. Her name was Elizabeth Hartwell. We were there on the day dedicated to her and her efforts.
We appreciate your readership! Thanks for sharing with your family and friends our newsletters and websites. After all, it’s how we grow!
Until next time,
Randal

COMPANIES RUSH TO SELL LOW-CARB PRODUCTS
By IRA DREYFUSS, Associated Press Writer
Take a piece of pita bread, a little tuna, some olives and capers and ╉ presto ╉ it’s a low-carb “sort of Mediterranean” pizza. The impact of the Atkins diet, the South Beach diet and other low-carbohydrate eating plans is everywhere at this year’s food industry show of new products.
Food companies are trying hard to fit the current low-carb diet craze into their familiar product lines, and Margaret Dennis’ easy-to-make pita pizza was just one contribution at the exposition organized by the Food Marketing Institute. Also on display were low-carb candies, cereals and salad dressings.
In her white chef’s uniform, Dennis, a culinary consultant to Del Monte, was handing slices to passers-by. On the pita bread, she spread a corporate-brand pizza sauce, added flavored tuna that Del Monte sells in a pouch for the quick-lunch crowd, and threw on olives and capers.

YOUR CHILD’S CHANGING VOICE
KidsHealth.org
Yesterday, your son sounded like he’s always sounded – like a boy. But today, you heard that first crack in his voice. He’s started puberty and several things about him are changing. Along with obvious changes in physical appearance, his voice will start sounding a whole lot different. For a while, he might have difficulty controlling it and he’ll make all sorts of odd noises when trying to speak.
It’s the larynx (or voice box) that’s causing all that noise. As the body goes through puberty, the larynx grows larger and thicker. It happens in both boys and girls, but the change is more evident in boys. Girls’ voices only deepen by a couple of tones and the change is barely noticeable. Boys’ voices, however, start to get significantly deeper.

WHAT ABOUT THOSE PRODUCE STICKERS?
Curious about those inscrutable little stickers slapped on the skin of the apples you pick up at the grocery store? According to Conscious Choice
(October 2003), the numbers on the stickers, called price look up codes (PLUs), can clue you in to the origin of your produce. Organically grown
produce will carry a 5-digit PLU number that begins with a 9, while genetically modified fare can be identified by a 5-digit PLU beginning with
8.

MASCARPONE CHEESECAKE WITH BLACKBERRY SAUCE
From The Best Slow Cooker Cookbook Ever
This creation was inspired by one I sampled at Stars Cafe in San Francisco a few years back. Mascarpone, a soft Italian fresh cheese, is now available in the cheese section of many supermarkets.
MAKES 8 TO 10 SERVINGS
* 1 cup finely ground amaretti cookies or coconut macaroon cookies (or 1/2 Â cup graham cracker crumbs mixed with 1/2 cup flaked coconut)
* 3 tablespoons butter, melted
* 2 (8-ounce) packages cream cheese, softened
* 1/2 pound mascarpone cheese
* 3/4 cup granulated sugar
* 2 eggs
* 1 teaspoon vanilla extract
* 1 (16-ounce) package frozen unsweetened blackberries or raspberries, thawed
* 1/2 cup powdered sugar
1. In a medium bowl, mix together the cookie crumbs and melted butter until well mixed. Press into the bottom and 1/2 inch up the side of an 8-inch springform pan.
