A NOTE FROM RANDAL

Hello Everyone,

August is here and before we know it school will be back in session. It’s
hard to believe how fast the year has flown by.

We have been having some pretty hot days in Virginia. Fortunately, the
nights cool off and we are able to have some cool time then and up till
about 9:30 AM the next morning. I enjoy the fresh air in the mornings and
being able to hear the birds singing and chirping. Although, right now that
is harder than usual because they are clearing and building a restaurant
within ear shot. So, I still get the fresh air but only real early in the
morning do we hear the birds singing to each other.

Please pay close attention to the article on aspartame. Many of us consume
aspartame and don’t know it or we don’t know the associated dangers. This
article presents some good information and should help to clear up any
misunderstandings or misinformation you might have.

CURCUMA LONGA (TURMERIC). (MONOGRAPH).

Curcuma longa, a perennial herb, is a member of the Zingiberaceae (ginger)
family. The plant grows to a height of three to five feet, and is cultivated
extensively in Asia, India, China, and other countries with a tropical
climate. It has oblong, pointed leaves and bears funnel-shaped yellow
flowers. (1) The rhizome is the portion of the plant used medicinally; it is
usually boiled, cleaned, and dried, yielding a yellow powder. Dried Curcuma
longa is the source of the spice turmeric, the ingredient that gives curry
powder its characteristic yellow color. Turmeric is used extensively in
foods for both its flavor and color. Turmeric has a long tradition of use in
the Chinese and Ayurvedic systems of medicine, particularly as an
anti-inflammatory agent, and for the treatment of flatulence, jaundice,
menstrual difficulties, hematuria, hemorrhage, and colic. Turmeric can also
be applied topically in poultices to relieve pain and inflammation. (2)
Current research has focused on turmeric’s antioxidant, hepatoprotective,
anti-inflammatory, anticarcinogenic, and antimicrobial properties, in
addition to its use in cardiovascular disease and gastrointestinal
disorders.

SWEET TALKING.(potential health risks of aspartame) by Ed Metcalfe

Aspartame is a sugar substitute added to literally thousands of products,
most notably diet soft drinks, and known best to the world of diet-conscious
consumers as NutraSweet. While NutraSweet maintains that its product is
entirely safe, independent researchers continue to present evidence of the
chemical’s neurotoxicity, linking its ingestion with the onset of numerous
adverse symptoms including — in particular — headaches, seizures
(convulsions) and mood disorders. In fact, aspartame had been the focus of
controversy long before it was approved for public consumption in 1981.
Several key tests conducted in the early 1970s to establish the safety of
the product were heavily criticised by US Food and Drug Administration (FDA)
scientists; while a Public Board of Inquiry set up by the FDA to address the
question of aspartame’s safety actually recommended that aspartame should
not be approved until further tests had been done to discount a possible
link between aspartame and brain cancer. In spite of these obj ections, the
FDA Commissioner approved aspartame. It is only now, 18 years later, that
those further tests on brain tumours are being conducted, not by NutraSweet
(not surprisingly), but by independent researchers at King’s College London.

NUTRITION CHOICE

EGGPLANT ROLLS STUFFED WITH BASIL AND GOAT CHEESE

For the tomato sauce:
1 onion, chopped
2 pounds tomatoes, chopped coarsely
2 tablespoons olive oil
a pinch of sugar
1 small garlic clove, minced

For the eggplant rolls:
1 1-pound eggplant
1/4 cup shredded fresh basil
1 cup grated mozzarella
2-3 tablespoons olive oil
3-1/2 ounces (about 1/2 cup)
mild goat cheese such as Montrachet ,at room temp.
fresh basil leaves for garnish

Make the tomato sauce: In a skillet cook the onion in the oil over low heat,
stirring, for 3 min., stir in garlic,and cook, stirring, until the onion is
soft. Add tomatoes, sugar, and salt to taste & cook over moderate heat,
stirring, for 20 min. Force the mixture through the fine disk of a food mill
set over a saucepan, (or puree). Cook the sauce over moderately high heat
for 5 to 10 minutes, or until it is thickened to the desired consistency.

Make the eggplant rolls: Cut the eggplant lengthwise into 1/4″ slices.
Sprinkle on both sides with salt and drain in a colander for 30 minutes. In
a bowl stir together mozzarella, goat cheese, and the shredded basil.Pat the
eggplant dry, arrange one layer of it on the oiled rack of a broiler pan,
and brush it with some of the oil. Broil under a preheated broiler about 4
inches from the heat for 3 to 4 minutes, or until it is golden. Turn the
eggplant, brush it with more oil, and broil it for 3 to 4 minutes more, or
until it is golden. Transfer the eggplant to a large platter to cool and
broil the remaining eggplant, brushing it with the oil, in the same manner.
Spread a mounded teaspoon of the cheese mixture lengthwise down the middle
of each eggplant slice, leaving a 1-inch border at the wide end, and,
beginning at the narrow end, roll up the eggplant jelly-roll fashion.
Arrange the rolls, seam sides down, in an oiled shallow baking dish just
large enough to hold them in one layer and broil them for 3 minutes, or
until the cheese is just melted and bubbling.Transfer the eggplant rolls
with a spatula to serving plates, spoon the tomato sauce over them, and
garnish the rolls with the basil leaves. Makes about 12 rolls. Serving 4 as
a first course or 6 as a side dish.

GLANDULAR SYSTEM

Continuing our discussion on co-factors, I would like to talk about how
supporting the glandular system helps assimilation of your nutrients.

Using the example of calcium, I have found that if the glandular system
isn’t working properly its hard to assimilate calcium and other valuable
nutrients.

In physiology this is proven by the parathyroid gland being required to
maintain certain blood levels of calcium in the body. The hormone it
secretes is called PTH. This hormone achieves an increase in blood level
calcium by influencing the amount of calcium absorbed from the small
intestine and reabsorbed from the renal tubules. If these sources don’t
provide adequate calcium levels then the PTH hormone instructs the body to
resorb calcium from the bones.

Suppose our glandular system doesn’t have enough nutrition to function
appropriately. Then the hormonal messengers may begin sending the wrong
information out to the body. An example of wrong information may cause the
body to begin taking calcium from the bones or other such mistakes. In the
calcium example this would cause our bones to become weaker and more fragile
over time. I experienced hormonal irregularities first hand a few years
back. These irregularities are best explained in the example below.

Imagine a lot of soldiers in war and getting ready to formulate a different
attack bccause charging the enemy hasn’t worked. A drunken 5 star General
walks in and tells them to do the same thing that hasn’t worked. The
soldiers will have to obey . As an observer, we might think the soldiers
are not very smart. The fact is, their orders caused the problem. The
hypothalamus is the 5 star General of your glandular system and if it gets
weak it begins to send out the wrong orders. These orders tell the organs
to do the wrong things. For example, your adrenals provide energy if the
hypothalamus says to the adrenals you are giving too much energy then they
will dutifully slow down. When all along you may be fatigued and want more
energy. I realized how important this organ was with me when I kept feeding
my adrenals herbs to get energy and nothing worked. Feeding my hypothalamus
caused my energy to take off. Now at 47 years young I now have more energy
than I did when I was 16.

Another item to consider for the glandular system is essential fatty acids
(E.F.A.’s). If you have dry skin this can indicate your low in the EFA’s.
The glandular system uses the fatty acids to make hormones. If you are
defecient then the body doesn’t have the building blocks to make hormones.
These hormones play a role among other things in calcium assimilation with
the parathyroid gland. Black currant oil is what I suggest to our clients
that have trouble assimilating calcium. Sleep problems can indicate a need
to improve calcium assimilation. Often, through nutrition and nutrients
this problem can be corrected.
