Health Tip: Too Much Fluoride Can Harm Young Children – Parents should monitor its use

(HealthDay News) — Although touted as an essential part of daily tooth care, fluoride can harm some children, according to Health Canada.

If children under 6 years old ingest high levels of fluoride while their teeth are forming, they can develop dental fluorosis, white areas or brown stains on the teeth. This may also damage the tooth enamel, causing tooth pain.

Avoid environmental pollutants (smog) by doing outdoor activities early in
the morning. Pollutants are at their lowest levels early in the day. Do
your yard work, exercise and errands in the morning to avoid the eye-harming
levels of afternoon traffic and air.

Vegetable Chili with Corn Dumplings
Adapted from a Vegetarian Times recipe from 1998
Serves 10

Here, old-fashioned cornmeal dumplings, flavored with herbs and cheese, float in a flavorful chili-style stew.

1/4 cup olive oil
2 medium onions, chopped
4 medium zucchini, diced
1 red bell pepper, diced
1 large green bell pepper, diced
4 cloves garlic, minced
1 jalapeño pepper, seeded and chopped (more if you like it hot!)
1/4 cup chopped fresh parsley
1/4 cup chopped fresh cilantro
1 T. chili powder
2 tsp. ground cumin
2 28-oz. cans Italian plum tomatoes with juice
1 12-oz. can tomato sauce
1 T. honey

In large pot, heat oil over medium heat. Add onions, zucchini, bell peppers and garlic and cook, stirring often, until softened, 15 minutes. Add jalapeño, parsley, cilantro, chili powder and cumin and cook, stirring, 2 minutes. Add tomatoes with juice, tomato sauce and honey, then simmer 10 minutes. Add beans; simmer 10 minutes more.

Cornmeal Dumplings
3/4 cup fine yellow cornmeal
2/3 cup hot water
1/4 cup whole wheat flour
1/2 tsp. salt
1/4 cup chopped fresh cilantro
1 cup farmer cheese or ricotta cheese

In medium bowl, mix cornmeal and water. Add flour, salt, cilantro and cheese. Form mixture into 1-inch balls. Add dumplings to stew, stirring gently to submerge. Simmer until dumplings are cooked through, 10 to 12 minutes.
