We’re still waiting for snow here in Virginia….at least in our little neck
of the woods 🙂 It will be so pretty to see it on the ground….but it
will be incredible to see the place green up in the Spring also, so I’m not
going to enjoy Winter as much as that. The trees were bare when we moved
in, so it will be an awesome experience to watch everything come alive when
it begins to warm.

The Holiday Season is definitely upon us and I hope that you have been
taking time to enjoy the Reason for the Season. We’ve seen a magnificent
Christmas musical/drama at the church we’ve been attending and have some
more holiday events on our calendar. It certainly warms the heart to see
the love that goes around during this time of the year.

I know that "bad" things still happen at this time of year like any other,
so look around for somebody to encourage or lend a hand to someone who isn’t
quite having a "merry" kind of Christmas. Don’t let the real Spirit of
Christmas pass you by.

Since it will be a new year before I write you again…..let us wish you a
VERY MERRY AND BLESSED CHRISTMAS!

GREEN TEA FOR SKIN CONDITIONS, INCLUDING CANCER

A recent review in the Archives of Dermatology suggests that green tea
(Camellia sinensis) has potential as a preventive therapy for skin cancer
and inflammation of the skin. Researchers from the Department of Dermatology
at Case Western University in Cleveland reviewed studies of the
anti-inflammatory, anticarcinogenic, and antioxidant effects of green tea or
its active constituents (flavanols, commonly known as catechins) on the
skin.

Overall, the studies demonstrated that both oral and topical green tea
reduced inflammatory responses (such as edema and erythema) that are early
markers of skin tumor promotion. Green tea also resulted in protection
against the development and promotion of skin tumors. The researchers
conclude that green tea is a promising anti-inflammatory and
anticarcinogenic agent that "may have a profound impact on various skin
disorders in the years to come," but recommend additional human trials in
the meantime. Keep in mind that not all green tea is the same. Make note
of the genus mentioned.

Virginia, on Monday, several researchers presented evidence that omega-3
fatty acids may have beneficial effects on blood pressure, endothelial

POTATO, SPINACH AND LENTIL STEW
For a Crowd – From Vegan in Volume

3 pounds dry lentils, rinsed
3 quarts vegetable stock
1 pint water
to coat pot vegetable oil spray
18 ounces onions, chopped
6 ounces celery, minced
3 pounds frozen chopped spinach, thawed and cooked
2 1/2 pounds red rose potatoes, thinly sliced and cooked
7 ounces lemon juice
1 ounce lemon zest
8 ounces fresh mint, chopped

In a stock pot bring lentils, stock, and water to a boil. Reduce heat
and simmer covered until lentils are tender (about 15 minutes on a
stove top or 8 minutes in a commercial steamer).

Heat a second stock pot and spray with oil. Saute onions and celery
until soft. Add lentils and liquid, spinach and potatoes. Cook over a
low heat until potatoes and lentils are soft. You should have enough
liquid to be stew-like; if liquid has evaporated, add more stock or
water. Stir in juice, zest, and mint just before service.

Total calories per serving: 247
Fat: 1 gram
Protein: 14 grams
Carbohydrates: 48 grams
Iron: 6 mg
Calcium: 178 mg
Sodium: 78 mg

THE ART OF CHANGE

I’ve met a lot of people in my life and I’ve yet to meet one that didn’t
have to make a change of some sort. It’s just when you are feeling
comfortable in your surroundings that "BOOM" things can get a little whacky..
It’s what you do with your circumstances that can make or break you.

Have you by some chance found yourself in a situation that you don’t want to
be in and don’t know what to do about it? Change it, rewrite it.

For me it was working 60 hours a week and not spending any time with my
children. My boys were growing up right in front of my eyes and I was
missing it. But I was the President of a company that I had built from
scratch. My family needed the money. I was a career woman….yada yada
yada.

It was time to take charge of what needed to be done. I quit my job. I came
home. I learned how to be frugal. None of those came easily but the reward
of all three was boundless. It was scary to come home and give up a
position, income, adult conversation. It took me a year to come to terms
with it. But it was a change that I and my family needed. I could always
work but my children would only grow up once. I couldn’t miss any more of
it.

Never allow the fear of change stop you from achievement. Put on a full
armor, say your prayers and rewrite your script. It’s your life. Grab it
with gusto and do all you can in the best way you know how.
